What’s up with my chicken?

We are making an effort to eat less meat and make sure that the meat we do eat is organic and free range.
Today I cooked organic chicken breasts, nothing fancy just a stir fry. The chicken was SO tough, dry and stringy. Was I just unlucky? Do I need to cook organic chicken differently (maybe low and slow?) l want to eat better but the kids wouldn’t eat it, I couldn’t finish it and I can’t afford throw out £7 worth of chicken!

I do find that organic, or even corn fed, chichen takes a bit more chewing.

It's not a bad thing.

Just like pappy sliced white bread is different to rye bread.

That was my first thought TheQueef! Maybe we are just going to have to get used to chewing more.

I find chicken breasts take a lot of preparation and attention to make sure they're not too dry. So for instance with a stir fry I always have to marinade the chicken in advance or I find it too dry, in eg. Light soy sauce and rice wine, or lime juice and dark soy. I much prefer chicken thighs for this reason.
