Hi all,

I've bought some disposable foil tray bake trays from morrisons. But all my recipes are too small for the trays.

Does anyone have a mix for a 32.4x20cm (or thereabouts!) tray please?

Im after a plain mix and a chocolate mix.
Thank you in advance

For a vanilla sponge in a 30cm x 20cm tray I use:
225g self-raising flour
2 tsp baking powder
4 eggs
225g soft margarine
225g caster sugar
6 drops vanilla essence
2 tsp milk

Flour and baking powder get sifted into the bowl. Add all other ingredients. When smooth add to tin. Bake for 30-35 minutes approx. at about 140 degrees C. Leave to cool for 10 minutes before decorating.
It's a basic cake mix so vanilla essence can be swapped for whatever you fancy, etc.

Lovely. Thanks I'll try that one. Would you just add cocoa powder and milk for a chocolate cake ?

I would tend to add about 2 tbsp of cocoa powder for a chocolate mix.

Loads of Mary Berry's traybakes are for that size tin.
