I love roasted veg and halloumi wraps, or if not got time to do the roasting I have them with rocket, salad and sweet chilli sauce, ready in about 3 minutes.

penne arrabiata

chop and fry a clove of garlic and however much red chilli your palate can deal with (half a chilli for just me)
add passata
season and ad a bit of sugar
cook penne
sprinkle with parsley and a shit ton of parmesan

yum!

I’ve just bought The Roasting Tray cookbook, it’s full of easy recipes that take 45 mins, I’ve made a few things and been impressed.
But my fave easy meal is a precooked chicken and tons of salad leaves, few croutons, Parmesan and Caesar dressing. Five mins prep, delicious. Not a cheap option though.

Hero I have that too! And the Green Roasting Tin as well. Most of them have very little hands-on cooking time, then they roast in the oven for a while while you can get on with other things.

My favourite very quick dinner for myself is devilled tinned crab on toast, or fried mushrooms and scrambled eggs on toast. For the kids it's probably pasta carbonara with lardons and frozen peas.

Ohh xiaoxiong if they like carbonara there’s a gnocchi with ham and peas with creme fraiche that is a nice change, and so simple.
