How to make risotto stretch tonight

Making prawn risotto tonight - informal supper - but have just acquired another couple of guests. Don't really want to go back to the supermarket as have some work to do. I can bulk out the risotto a little bit with other ingredients i already have. Also have basic salad ingredients, and naice bread, but would like an additional side dish. Either which I can knock together from things I've got or can get at the local spar rather than driving a few miles to Tesco. Any thoughts?

Seafood Risotto is often served aside grilled fish / seafood. I’d probably have a whole fish in the middle of the table to share - if there’s leftovers you can use it the next day in soup / fish pie.

Make your risotto a wee bit bigger - more rice and if you've got peas in the freezer or broad beans or fresh peppers, chuck them in too.

Three bean salad is a cupboard favourite. Just whatever cans you've got with half a finely chopped onion and some coriander or a vineagrette.

I've been known to put the risotto into roasted peppers so that it looks more impressive even though there's less of it per person

Wow that was quick and worth starting the thread just for the image of @IHaveBrilloHair 's cat on her head!
Yes am already planning on adding peas,have found some chorizo and have a red pepper I can add but not enough to make the risotto a side dish.
Can get garlic bread from Spar I think. Don't have enough beans to make a bean salad. Guess I'm going to have to go to the supermarket after all but at least I have some ideas as to what to go for to speed it up.

(I don't have enough risotto rice to make it bigger and was trying to avoid having to go too far to get some bit with the ideas here think that's what I'll do

Spar should have risotto rice shouldn't they? Or certainly some kind of short grain rice. But yeah, I'd just major on garlic bread and a nice pud. Risotto is nice, but actually you don't need loads of it as its not got much texture. I'd rather a smaller portion and salad/bread/pudding than just a big bowl of rice.

Have you any green veg e.g. broccoli, asparagus? Steam it and top it with a pangrattato - fried breadcrumbs and garlic mixed with lemon zest, herbs and seasoning.

Risotto is absolutely delicious if you make a nest and put in a poached eggs, then cover it up so the egg is sort of hidden. Not sure that would work with seafood risotto but with a leek and cheese one it is sublime.

I love eggs and prawns together, will try the 'hidden eggs' another time when I make for family in case I don't get it right, but you've given me the idea of adding hard boiled eggs to the salad to make it more substantial. It's a really casual, simple supper, impromptu anyway but a couple of friends who weren't coming have decided they will. They will drink wine with me while I cook :-)
I'd made a fruit salad for Afters (this lot are super healthy!) so have added more fruit, and have made some shortbread to go with it.
Thank you all for your suggestions, I'm usually pretty good at this stuff but had to do some work today so really appreciated the help, thank you again
