I have a pile of eating apples to use up.

Any ideas for recipes please?

All the usual ideas ie cake or crumble are too fattening for me at the moment 😔 which is why I thought the oats might be useful.

Would also like things that could be frozen if possible but that would be a bonus and not essential.

Any ideas please?

You can chop the apples into rough chunks, and cook them in the slow cooker for about 5 hours, to make apple 'jam'. You don't need to add any extra liquid (or sugar). The jam is freezable, I decant into small pots and freeze in 2-portion sizes. You can use it on porridge, to top yogurt etc as a healthy snack/breakfast, or on toast instead of proper jam.

You could probably mix the apple jam with oats to make a sort of flapjack.

Apples are also great in salads, with salad leaves, cheese (brie is good) and nuts.

Make Waldorf salad, lovely with smoked mackerel fillets for a quick lunch.

Stew gently, maybe add nutmeg or cinnamon, when cold stir into plain low fat yoghurt for a light pudding.

Stewed apples are lovely with plain yoghurt or porridge
You could mix the oats with some of the apple and egg and make apple pancakes
Make oatcakes

Apple and date porridge is lovely. I soak my oats and chopped dates overnight in cashew milk (I'm dairy free, you can use normal milk or whatever you like) and in the morning, peel and dice an apple, nuke the apple in the microwave with some cinnamon, then add it to the soaked porridge and dates and nuke it all again. It's absolutely delicious.
