Batch cooking/slow cooker (meat and dairy free)

Maybe a tall order. Baby no2 is due soon and DH doesn’t eat meat and DD (aged 3) can’t eat milk or milk products. We normally all eat together the minute DH walks through the door at night. Any later would be too late for DD and we like to eat together.

Any suggests for either batch cooking, slow cooking or quick and easy meals please. Thanks

Pick up a copy of a cookbook called the Green Roasting Tin by Rukmini Iyer. It's all tray bakes and half of them are vegan and the other half are easily made dairy free. There are some spicy ones I've toned down for the DCs but everything we've had from it has been excellent. It's the oven equivalent of one-pot meals. (I have it on kindle so I can search for key ingredients more easily.)

She has a couple of other books all based around the same concept - all the books are good but many have meat or fish which doesn't work for your DH.

Thanks. We already make a few of those recipes. Unfortunately DD thinks couscous is the food of the devil.
