Self imposed vegetarian child

We are not a vegetarian family, although we eat vegetarian food fairly regularly. My son is almost 4, and will not eat meat. Not anything and he will not be fooled by quorn! The only thing he will have a bit of is a tuna pasta as long as it's heavy on tomato sauce. He will eat:
Red lentil and carrot bolognese/lasagne
Mac cheese
Cauldron vegetarian sausages
Scrambled Eggs (but not omelettes)
Cheddar cheese
Baked beans
Chick pea korma but only if I make with a jar 🙄
Chick pea tagine
He eats all the usual standard vegetables and carbs and he will eat most fruit.

I am quite pleased with this list as he was a terrible fusspot as a young toddler and most things ended up on the floor. I would, however, like to increase our vegetarian repertoire seeing as he won't eat meat.

What are you favourite veggie things that your young children enjoy eating?

Best ever veggie comfort food:

Fry onion and green peppers
Fry some veggie sausages
Throw in can of beans and some cherry toms
Simmer with lid on for ten mins

We are not actually a veggie family,but try to have some meat free meals : Mushroom Risotto( takes a little time) but seems worth it as everyone eats it .(About 350 g Chestnut Mushrooms .500 g Arborio rice (from Sainsburys,Asda etc 1 or 2 re onions ,1/2 teasp garlic .2 1/2 pints veggie stock ,salt, pepper to taste.Fry off onions 5 mins till soft, add mushrooms and rice. pour liquid in about 1/2 pint at a time till absorbed .About 20 /25 mins .Serve with a little grated cheese if necessary

I make risotto in my pressure cooker and it’s rather nice - takes about 12 mins I think.

could you start to get him involved too.would this tempt you more into cooknig.making veggies burgers and veggie enchiladas.

Make your own nuggets (any veg mashed together, chilled, then dipped in flour/egg and panko bread crumbs.
