How quick are we talking about? My feeling is much vegetarian cookery is more effort, peeling, chopping than many meat dishes. An Instant Pot pressure cooker can cut down cooking times e.g. veg curry in about 5 mins once steam is up. Something like: fry onion till soft, garlic and ginger if you like, add curry paste, add chopped aubergine, courgette, peppers, peas, whatever, some fresh tomatoes on top, a little water or veg stock. Set for 5 mins, leave it to do its stuff. Eat with naan bread or microwave rice. Or leave out the curry and serve with pasta and grated cheese.

Pesto pasta
Frittata/omelette
Jacket potato and baked beans / baked beans on toast
Scrambled eggs on toast
Macaroni cheese
Egg fried rice (with peas is extra delish)

Pea risotto - 25 mins of stirring ( it's quite therapeutic actually)
Beans and tomato sauce - fry off onion, garlic and red pepper, add a big jar of tomato and basil sauce and a tin of mixed beans. Lovely with lumps of feta added at the end.
Mac and cheese
Pasta and tomato sauce bake with white sauce and cheese on top
Herb and cheese omelettes
Stuffed ravioli with butter and cheese - 5 mins!

Fritatta with tons of veggies in it (assuming you're veggie and not vegan)
Pasta with tomato sauce (use a jar or go a bit chunkier and use a can of ratatouille)
Flatbreads with bought hummous, crudites and olives etc, more of a snacky meal though
Bought fresh pasta with a fresh pasta sauce, throw in some mushrooms and spinach if you want more veg
Lentil curry with rice (red lentils take about 20 mins, so it'll probably be on the table in less than half an hour)
Vegetable chilli with a baked spud
Frozen stuff - some of the frozen veggie "meat" substitutes are very nice. I really like the quorn "meatballs", great with spaghetti or as a pizza topping. The Linda McCartney stuff can also be nice, depending on what appeals to your personal taste. Veggie sausages, mash and baked beans are a staple in this house.

Tesco's Roast Veg, feta and couscous salad is fairly quick. (If you don't include time in the oven)
You can use the frozen roasted veg for Waitrose to speed it up.

Pesto spaghetti is my quick veggie go to, I usually added chopped fresh tomatoes, fresh basil & chilli too.

We're having potato wedges, salad and trying some new vegan sausages (red pepper and butternut squash) that Aldi is currently selling.

Our other go-tos:

  • A nice chunky soup and fresh bread rolls.
  • Stir fry with tofu, lots of veg, some noodles if we're very hungry, and spices/sauce.
  • Pasta primavera at the moment, when there's fresh asparagus in shops.
  • "Bowl food": a random selection of veg, legumes, grains, and herbs/spices all in one pan.
