I know you asked for quick but if you want cheap and nutritious a slow cooker is your friend as you get tasty results from cheap cuts of meet or things like lentils. Prep time can be really quick too, when I had a long commute I would prep the night before, put the cooker on in the morning and come home to dinner. Lots of recipes online.

Long term a second a slow cooker, but in the meantime how about a five bean chilli (canned beans, canned tomatoes, medium onion sautéed with finely chopped carrot and celery, garlic, cumin seeds, oregano, chopped coriander stalk, chilli powder to taste, cook for 45 mins, longer is fine, add fresh chopped coriander and fresh chilli if desired. Serve with sour cream, cheese, rice, wraps, baked potatoes, tortilla chips as desired) I make double as it can be served in different ways two nights running, just add the coriander only to the portion being served

Kippers (Sainsbury’s do an easy to open chilled version). Just fry them in a couple of minutes. Serve with baked beans and tomatoes heated up in the baked beans and potatoes.
Iceland do all sorts of frozen fish that can be cooked straight away and is cheaper than other supermarkets. They also do stir fry vegetables which are quick and reasonably priced.
Then there is liver, bacon and onions.

Plus what is suggested above if you already have a slow cooker.

A piece of gammon can go an awful long way. Sliced with chips and egg or potatoes and veg, cubed with mushrooms and egg with pasta and then the boiling water used to make a few litres of ham, tomato and lentil soup.

Beany rice, all storecupoard/freezer ingredients.

Frozen mixed veg, as much as you want, into a bowl and cover with hot water to thaw. I usually add extra frozen sweet corn for DD.

Fry a chopped onion, red if you have it, til soft and starting to caramelise. add a crushed garlic clove and fry 2 more mins. Drain and add mixed veg, plus a tin of kidney beans. Season with salt and pepper, pinch of mixed herbs. Put a lid on the pan and cook about 20 mins, stirring to stop sticking. Beans should be soft and veg cooked through. Serve with rice, we mix it all up. DD adds ketchup and mayonnaise, I had it with soy sauce tonight. Sometimes add chargrilled chicken if we have it but the beans are fine for protein. I love this meal, don't have to buy anything specially as usually have bits in, and you can add whatever you like! And it's cheap!
