Risotto, or minestrone soup (my favourite is vegetable minestrone with nice stock & a swirl of pesto added at the end, served with lovely fresh bread).

Use stock to make white wine sauce, add cooked left over chicken, mushrooms if you like them, and it's the basis for a variety of meals.

A chicken and sweetcorn soup like you get from the Chinese takeaway. Very simple to make, just need a bit of chicken, sweetcorn and an egg.

Mmmm...
Add cold diced chicken, mushrooms, spring onions and some udon noodles. It's lovely with soy sauce to enhance the umami ness still further. Could slice a medium boiled egg and add that in too.
