Favourite work salad recipes/ideas?

I usually take a mixture of salad leaves, tuna, tomato, spring onion, celery, red pepper from a jar, cubed cheddar, cucumber, olives, dollop of ready made bean salad/quinoa from Asda, and some Italian dressing.

I’m getting a bit bored of this same routine and want to steal your work salad ideas!

I usually take a chicken breast marinated in herbs, cooked broccoli and baby corn. Have recently been taking a tin of tuna, an avocado and some roasted vegetables but am equally bored!

I'm going to start roasting my favourite veg (such as sweet potato...squash) with some chickpeas, garlic, onion and herbs. Then I'll serve this with fresh spinach or I'll add some kale to the tray 10 minutes before the end so it crisps up a little.

Today I had some cous cous with a Thai style veg mix from Aldi frozen section. It was really nice.

Sometimes I use goats cheese and sun dried tomatoes

I can recommend this book for interesting salads. It's well worth the price (I've got the kindle version)
