what can I do with the sourest sauerkraut ever?

new area - supermarket lottery Grin

bought sauerkraut to have with sausages and mash, but it's so sour it's inedible.

I have a kilo of the stuff cost a fortune I'm not throwing it out

what can I do?
my mum used to add a tin of pineapple chunks but non in my family like pineapple...

What about baking it with some apples? Maybe a little bit of stock/white wine and some brown sugar? Would go nicely with any kind of pork dish I imagine?

Add a bit to stir fries, soups, stews, etc etc. It's surprising how well it goes in things, and you can balance the sourness with other flavours.

Serve with duck in plum sauce, the sweet sauce will balance the sourness.
