Christmas buffet (in spring)

For reasons which would be too outing to go into, I'm planning a Christmas party this or next month.
Will have to be finger food or fork only as wont be able to seat everyone. Want to keep the food Christmas themed (Christmas dinner buffet style) but simple. Know how brilliant you lot are at this stuff so would really appreciate your help.
So far am thinking:
Hot turkey sandwiches (ie carved roast turkey; stuffing and cranberry. Maybe a variety of breads/rolls.)

Sausages wrapped in bacon

Potato wedges

Coleslaw made with sprouts (if we can get them)

Mince pies & Christmas cake. trifle. Maybe Christmas pudding.

Mulled wine

Then running out of ideas foodwise. So a buffet that shouts Christmas without being a Christmas dinner.

Can cobble together enough leftover crackers from various friends and will have Christmas decors and music. Maybe some Christmas games but might not be appropriate.

You could serve stuffing balls on their own as well as in sandwiches

Oh and some tins of Quality Street / Roses

Sausage rolls, obviously.

Some gravy to dip the rolls into? It's a thing, honestly!

You could do a Christmas pudding ice cream - ie crumble bits of Xmas pudding through vanilla ice cream.

You need to take inspiration from us 'southern' types that have Christmas in summer.

Smoked salmon / BBQd fish
Boiled new potatoes with butter, parsley, chives, sea salt, pepper
Warm new carrot salad
Green leaf salad with something like pomegranate or mango
Prawn and chorizo skewers

And of course, a festive, fruity pavlova.

mini prawn cocktails in little jam jar or shot glasses.
crackers.
make some snowflakes from paper.
could you make some stolen type bites.
have some ginger biscuit shapes on offer
red cabbage
roulade or something for pudding
big box of cadburys in a bowl.
brownies or choc melt in the middle pudding for alternitvie

If you wanted some lighter dessert ideas with it being summer, the following are pretty festive. Otherwise I think your menu sounds great though :)

In Australia, we like prawns for Christmas. Lots of them.

Prawn cocktail lettuce cups, loaded fries/wedges (topped with sausage meat, stuffing, etc) honey roasted parsnip crisps, soup shots (could be vegetarian). Good luck!

I think I'd go for nigellas Poinsettia fizz cocktails rather than mulled wine. Hot wine all wrong in the summer (to be fair in the winter too). Her clementine cake might be nice with crime fraiche too and more hot weather friendly. Or a Yule log..
