Reheating Rice?

Hi!
I was just hoping for some advice. I often cook a Chinese chicken curry with my own egg fried rice. My DP loves it, and has stated he would love some for his lunch for work. I say no problem, I can make extra and store it for tomorrow and he looked horrified.

I'm not crazy, right? I was under the impression as long as it was reheated and eaten the next day it would be fine, but he's adamant that you can't reheat rice!

It's not the reheating that's the issue- it's the cooking of the cooked rice. It must be cooled immediately and refrigerated.

The storing would be an issue too, though? Out of the fridge from early morning till lunchtime? I wouldn’t.

It can lead to nasty food poisoning and its something to do with a toxin produced when the rice is cooling or kept warm or at room temp. Reheating to a high temp can't destroy it like bacteria. If you chill it as quickly as possible and keep it refrigerated it should be ok.

So how would you advise that I cool it? Sorry if I seem naive 🙈 Don't want to give DP food poisoning to have him say I told you so! 😂

I'd spread it out thinly on a plate so it cools quickly, then get it in the fridge as soon as its cold. Don't put it in the fridge warm and don't leave it hanging around at room temp for any length of time.

It's the cooling. Although admittedly I always make extra rice inc egg fried and put it in takeaway containers into the fridge when it's still warm and I've not been poisoned ....

Does he have a fridge at work for storing it? Cook and cool it and store it in the fridge as soon as possible at home. Is there a cool bag with ice packs he could use for transporting it to work and then it can go in the fridge there?

@dementedpixie yes they have a fridge and his work is only a 10min walk from where we live. Thanks all! Looks like I'm cooking extra tonight 😁
