How to roast a whole chicken?

Help! I've got relatives coming over tommorow and they're all carnivores.

Do I just put it in the oven as it is or do you have any suggestions as to what veg to surround it with? I would also like to make some gravy from the juices. How do I do that?

any help would be very much appreciated!!

I take it you are veggie then

roast in a tin, with spuds, parsnips, sweet potato and stuffing - paxo sage and onion is nice.

I wouldn't make gravy out of the juices personally - I find it too greasy. I use cooking water from the veg and a thickener.

I love the gravy out of the juices - I stick half a lemon, a garlic clove and some herbs in the cavity, and towards teh end of the cooking time tip the tin to get the juices out. Use some of the fat (it will separate) to make a paste with flour, then thin with the juices and some stock (veg water or whatever) and season.

Take some olive oil, ginger paste (if you have), crushed garlic, dried herbs such as rosemary, thyme, coriander leaf, stir, and marinade it in this for a few hours preferably (or just 5 minutes) prior to them coming. Be prepared to let it roast on gasmark 5 for around two hours.

You can just steam some vegetables to go with it. Serve with rice, or couscous.

Forget about stuffing and making gravy.

Use the cooking juices, due to the garlic and the herbs the juices will be very tasty and you can just let them spoon over chicken if they want to.

Either put the chicken in a casserole dish, or wrap it in tinfoil & place it in a baking tray.

Read the weight of it & got by the weight. I think it's so long per kg & 45mins.. but I could be wrong, it's ages since I cooked chicken, that's dh's job now

I make gravy from the juices & some bisto & cornflour to thicken.

I wouldn't cook any veggies around the chicken as the juices will make them very greasy.... how about boiling some sprouts, cauliflower & brocolli? Carrots??

rub it with olive oil, butter and salt and black pepper

stick half a lemon up its arse

put it breast side down in a tin

rosat for 1 hour in a 190 oven

turn it the other way up after 40 mins

Ooh! Thank you very much for all your suggestions.

I used to be veggie but am trying to raise ds as non veggie until he can decide.

Think I might try and keep it simple and do the garlic, olive oil, lemon thing with roast tatties and boiled veg.
