Coconut Oil

What oil can I use when a recipe calls for Coconut Oil.

Depends on the recipe, but It's difficult to go wrong with a neutral vegetable oil. Or ghee if it's an Indian dish perhaps?

You'll miss out on the taste of course.

Any oil. As PP said, you'll just miss out on the taste.
