Melting 85% chocolate for a mousse?

Is this possible? Or will it just clump when you fold in the egg yolks as mine did??

It's definitely possible - how did you melt your chocolate?
I don't normally put egg yolks in mine though - just the whisked egg whites....

The percentage of cocoa is not likely to make any difference. It’s more likely to be how warm the chocolate and eggs are when you mix them. Are sure they’re both at room temperature.

Sounds like I have to make sure they are both the same temperature?

I melt the chocolate over but not touching hot water. I keep some fridge-cold water close by and if the chocolate starts to "split" I whisk in a teaspoon of the water as needed. I have the eggs at room temperature and let the chocolate cool a bit, but not too much.
I make a low-carb mousse with just very dark chocolate, egg yolks and beaten egg whites. It is delicious.
