Smoked cheese?

We got some lovely local smoked cheese for a cheeseboard over easter.

There’s still a good bit left. It came in the wax covering so I’ve kept the left overs in the wax, wrapped in cling film in the fridge.

Any idea how long this’ll keep? If not long, any ideas for recipes to use it up - my first thought was in a beef burger with some bacon etc but that’s a bit of a cop out!

Any help appreciated.

I'd go with a cauliflower cheese like this

I’d just eat it in thin slices, but I wouldn’t dilute the taste with crackers.

Like any cheese you will be able to tell if it’s too far gone because it will either be covered with to much mould to cut off, or it will have dried up and gone hard. You can freeze it if you don’t want to use it up now.
