Easy veggie dinner inspiration!

Have completely drawn a blank when planning for tomorrow, please give me help! Mum and veggie brother visiting, so 6 of us to feed. Lunch is couscous with asparagus, peas, dill, feta, followed by rhubarb meringue pie. Dinner needs to be something light-ish, have to avoid most pulses, we are eating pasta tonight so not that, and it would be great to cook ahead if possible. Any thoughts??

A big flatbread topped with red onion, figs and blue cheese. Scatter oven rocket before serving. Serve with a couple of nice salads. It’s like a fancy pizza really.

One of mine & DH's favourite nice but easy dinners is leek & mushroom risotto. I use either a few strands of saffron or a pinch or tarragon in it, & a small glass of white wine. I add a few pine nuts too, & about 1/4 stock cube for 2 people. I'm a lapsed vegetarian, DH is a very committed carnivore. It works with just about any mushrooms IMO - from plain white cheap ones, to any of the wild harvested types that cost a lot more. Not sure about cooking ahead but IME once you get past all the adding of ingredients, risotto mostly needs to be left alone until the last few minutes.

Maybe serve something like roasted figs with greek yoghurt if you want to increase the overall protein content of the meal.

Lightish can mean any vegetable soup, good bread, cheeses, salads.

Omelettes or filled pancakes - though fiddly as you have to have a bit of production line if making there and then - are also good. Spinach and ricotta is a good pancake filling.

This is divine. I use pearl barley and omit the goats cheese as it’s a bit heavy. I use grated Parmesan but a veggie version of similar hard cheese would be yum too.

Also made this for lunch today and it was really tasty. Light but satisfying.

I am trying to cook more veggie food. I have made these halloumi fajitas a few times and they are bloody lovely! You can't really prep in advance but it's quick and easy.
