How best to use leftover potato wedges

Please can you share with me any ideas on how best to use up leftover potato wedges.

I tend to just reheat them but thought that there might be something more interesting that I could do with them.

I would take the wedges and a jar of mayo. And dunk them while watching tv. Not interesting but delicious none the less. 😋

Cook some sausages and veg including onions. Chop everything up then fry them up.

Sprinkle in garlic, finely chopped onions and grated cheese and then bake in oven for 30-40 mins. Can added chopped tomatoes for extra flavour and potentially a bit of shredded basil.

Make a cottage pie, chop them up and use on top instead of mash (add grated cheese)
Chop up and use in a frittata/Spanish omelette

Use a little oil, sauté a thinly sliced onion until golden then add curry powder, stir til spice is cooked, add peas, sweet corn and chopped up wedges then when cooled put into samosa pads.

Thank you for all these excellent ideas.

In the end I smothered them in Creme Fraiche with a bit if seasoning then grated cheese and popped them in the oven. I cooked sausages to go with them and it was a big hit.

Will try the other ideas next time.
