In need of Easter Lunch inspiration please

I have the lovely leg of lamb, but the weather is looking good for the weekend and I’m suddenly not fancy a roast with all of the trimmings. Left to myself I’d go for Schwama and have salad, dips, flatbreads etc but DP isn’t keen on the sides that would go with it - he’d eat the lamb but not really the dips and salads. DS isn’t much of a meat eater so the rest of the meal needs to have a decent variety for him.
So, hit me with your ideas please as I’m struggling for inspiration for something special Smile

I would probably be scouring Ottolenghi type recipes...maybe something like this
www.bbcgoodfood.com/recipes/2249642/griddled-aubergines-with-sesame-dressing or www.sabrinaghayour.com/cumin-roasted-aubergine-wedges

Still roast it but instead have salad and bread to make sandwiches?

YemenRoadYemen · 17/04/2019 06:37

Blatant place-marking for similar inspiration (except it's autumn here, not spring).

missclimpson · 17/04/2019 06:39

We put shoulder or boned leg of lamb into a herby marinade for several hours and then barbecue it and serve it with salads.

AnotherRubberDuck · 17/04/2019 06:54

I'm doing mine with daupinoise potatoes and spring vegetables.
No yorkshires or stuffing, so not a heavy as a usual roast.

Ooh following. Love that aubergine idea! I have six for lunch and really wasn’t sure what on Earth to do in the warmer weather

I have 7 coming on sat night and 11 on Sunday. Needed to think of ways to make things fairly easy so have decided to do a diced lamb and veg mixture in the crock pot. I’ve got lots of ceramic single portion serving dishes. I will bake some squares of puff pastry, fill each dish with lamb mixture and pop some pastry on top. Will make a veggie version in another crock pot. Serving with home made red cabbage and greens and mint sauce.
Both meals will be the same (different guests each time), and will prepare everything in one go.
If the weather is hot....it’s hot. Have done my thinking and planning so not changing it now!

Think I’m going to do ottolenghi shawarma with the aubergine and his tomato and pomegranate salad flatbreads and couscous with tatziki.

EnglishGirlApproximately · 17/04/2019 10:01

Thanks all, I’ve got both the Ottolenghi shwama recipe and Sabrina Gayhours harissa marinaded recipe which look great but I’m not sure about sides - no one other than me will eat aubergine, DP doesn’t like things like hummus, tabbouleh etc. I’m thinking maybe with turmeric roasties, Egyptian salad and flatbreads?

I'll be on my own with a sandwich

AtleastitsnotMonday · 17/04/2019 15:56

Sounds good. Could do a potato salad instead of roasties if you wanted it done in advance although I do think the roasties would be delicious.

Honey roasted carrots?

EnglishGirlApproximately · 17/04/2019 19:54

Honey roasted carrots is a good call everyone would eat them. Also liking the potato salad idea but not sure my usual recipes would go very well, has anyone got any alternative potato salad ideas? I usually do mustard mayo or mint and spring onion but I’m thinking if the lamb is middle eastern they won’t work

That looks great, it’s one of the Ottolenghi books I don’t have so thanks for sharing Smile You might have cracked it for me!
