Quick and easy lunch or dinner recipes

I’ve become really lazy. Plan to meal plan but then never do. Looking for quick and easy lunch/dinner recipes that are not just healthy and nutritious but also filling so I don’t end up snacking on Bugles or whatever else I find in the cupboard because I still feel hungry Blush I do snack on fruits but I’d rather just feel full after eating but I somehow never do 🙈

Looking for recipes that don’t require too much faffing about with a list ingredients as long as my arm.

Stir fries which include noodles. I use straight to wok noodles from Lidl half the price of other supermarkets. Tonight we are having noodles and beansprouts with soy sauce to accompany chopped pork fillet and peppers stir fried in toasted sesame oil and then adding an Asda 35p sachet of hoisin stir fry sauce, only 2 of us so there will be enough pork left for wraps for lunch tomorrow.

Jacket spuds with all sorts of fillings

Veggie curry. Cauliflower, pea, potato and paneer and use a jar of sauce lots of other veg could be added.

Really? To me that’s a bit of an epic.

When I’m feeling lazy I just do salad, cous cous and some sort of protein. Tonight it was foil baked salmon.

This is delicious. Chopped chilli, fresh thyme, chopped up garlic and grated lemon zest. Add to this: On a baking tray put cherry tomatoes, mushrooms, ricotta cheese, oil, salt and pepper. ( you can also add chopped peppers. Also asparagus, but only in last 10 mins). Cook in oven for 40 mins. Boil spaghetti. When done, add cooked spaghetti to tray, addsome lemon juice. Mix it up and serve. Heavenly!

Also, bacon and mushroom carbonara is easy and quick to make. Takes as long as the spaghetti cooking time!

Also, Simply Cook has spice pots you add to fresh ingredients and you have a delicious meal in 15 mins. You can get a trial box for £3!

Speedy tuna pasta bake.
Cook pasta. Mash tuna with plenty of black pepper and vinegar. Add to pasta with sweetcorn and chopped peppers. Stir through a good dollop of phili. Pour into an oven proof dish, top with grated cheese and breadcrumbs and put in the oven

Paprika chicken skewers
Dust chicken breast chunks with paprika, thread on skewers with cherry tomatoes and peppers, bake for 15-20 mins serve with salad.

Things in wraps are always quick and filling. I do grilled halloumi slices, tray of roast veg and wrap them in fajita wraps. Can add couscous if you're hungry. Works just as well with chicken strips, lamb (can add pomegranate, nuts etc to couscous if you feel fancy and that makes it more filling).

Jacket potatoes with exciting fillings like mackerel, beetroot and creme fraiche? Potatoes just sit in the oven so you don't have to do anything to them.

Nice omelettes - big handful of herbs or wild garlic in the middle - or for a more filling dinner, a spanish omelette with sliced cooked potatoes, leftover veggies and chorizo?

Omelettes
Always keep a jar of passata and olives (if you like them!) in the cupboard and some pizza bases in he freezer to knock up a quick pizza with leftover roast meet, cheese and veg.

You could also make up some pancake batter in the morning and leave it in the fridge during the day to make savoury pancakes for dinner (we have ham and cheese with ours).

Chicken tray bake, 5 mins to prep, slam in oven for 40 mins.

Chicken thighs, variety of veg normally including baby potatoes or sweet potato wedges. Then some flavouring herbs, garlic and oil or a little curry paste, or chorizo, what ever takes my fancy.

Also works with fish, but roast the veg first then add fish fillets for last 10 mins.

I cook Bolognese, then portion and freeze, pull out individual portions in the morning and reheat in a saucepan whilst you cook pasta.

Special fried rice is great at clearing out what's in the fridge. Use pre cooked rice pouches or m&s do a frozen rice with peas, onions and sweetcorn that makes a great base.
