Hello all, I baked cupcakes and only for it to turn out flat like in the picture attached. Can someone be kind enough to tell me why they are flat? Not enough flour?

Did you over beat the mix. What temp was the oven. Maybe it was too hot. Post the recipe.

Recipe

Flour 250g
Butter 250g
Sugar 250g
4 eggs
Vanilla extract
Baking powder 1 teaspoon
But what I did was I added some dessident coconut + battery to scale died so I had to blindly judge what 250g of sugar and flour is + I added poppy seeds and orange flavouring and yellow food colour as the kids wants it yellow.

I'm slightly confused. You added dessicated coconut, poppy seeds, orange flavouring and yellow food colouring all into the mix? How did you blindly judge the flour and sugar, did you covert it to cups?

The problem is almost certainly the lack of accurate quantities. Adding extra ingredients even to accurately weighed ingredients will also affect a bake.

If you blindly added the quantities then surely you don’t need other people to tell you what happened!

Adding the extra ingredients will also have affected it as they will add more weight to the mixture so it will struggle to rise.

I often get cakes that don't rise much and that's with correctly measuring. I've tried different brands of baking powder but made no difference. I was recommended to put an extra egg or two in. Will this work? Or just double the recipe quantities?!

Looks like too much sugar which will mean they don’t rise. Saying 5hat cos they look a bit granulated on top

Yep looks like too much sugar, but you blindly added the ingredients so I don't see how you even need to ask what went wrong!
