Just me and DH for dinner tonight, what can we have that is really tasty, healthy ish and doesn't need any fancy ingredients.

Scrambled eggs on toast. Plus vegetables of your choice or start with vegetable soup.

I make pork and Parmesan meatballs that are super tasty. Not too much of a faff.

Pork meatballs sound nice have you the recipe please and what do you serve with them?

Love scrambled eggs, but fancy something a bit more special.

Ah steak is a rare treat for us! I've got two T-bones from the butcher in the freezer and I'm just waiting for a kid free night to cook them!

Was watching Jamie's quick and easy yesterday he did some lovely pork chips with peaches but OH hates fruit and meat.

Sorry just saw you asked for recipe! Probably too late but anyway...
500g pork mince
100g grated fresh Parmesan
1 egg
Bunch of coriander finely chopped
Breadcrumbs to bind or I use almond flour as husband is gluten free - I don’t have a weight for this but not very much, like a small handful
Garlic granules
Salt and pepper
Chuck all in a bowl and mix well. Make into whatever size meatballs or burgers you want and fry until cooked.
I serve my meatballs with a marinara sauce which is just 2/3 cloves of garlic lightly browned in olive oil, carton of passata, dried oregano and salt and pepper. Simmer gently while your meatballs cook.

Nice and easy and really tasty. Serve with pasta or whatever you fancy.

I do pork meatballs with lemon and thyme, use the same marinara sauce as PP. serve with Orzo which is a relatively new find of mine but really lovely.
