Omelette fillings

I eat a lot of omelettes but am lacking inspiration on fillings - help!
I’ve done the usuals - mushroom,cheese etc but I’m bored!

Any ideas for fillings? I DON’T eat red meat

Spinach spring onion and feta ( I often add some fresh coriander or parsley also if I have any fresh needing using up.. )

wilt spinach in olive oil with a little garlic if you like , slice sp onions and toss them into cooked spinach .

Make omelette and whilst its still in the pan , pile in spinach mix (making sure ts not too wet by pressing it in the cooking pan a little with a slotted spoon to release any excess water .

Crumble in feta , add any chopped fresh herbs you are using on top, twist of black pepper ( I often add a splash of Tabasco also,)

Fold over and scoff!

Prawn, tomato parsley and feta is also good if you eat prawns . again a splash of chilli sauce adds wonders !

Masala omelette is also good , as is Chinese style with stir fry veg and beanspouts..

Peppers, tomatoes, and baby spinach. Cook them in the pan before adding the egg. Then add a bit of grated cheese.

I may be over reaching but I think whatever you like in a sandwich you can put in an omelette! It's an informal affair unless you're MRJ. I'm keen to know what you try! Love omelettes!

Personal fave
Spinach, cheese and ham and dp adds mushrooms
Microwave the spinach first for a few seconds to cook as that's how I like it

My grandad used to make Paratha Omelette - so delicious. Lots of recipes if you google it.

Thank you so much for all of the suggestions - definitely going to look up the masala and paratha ones as they sound intriguing

Spinach and prawns added to the shopping list - and hadn't thought about garlic mushrooms so will give that one a go ASAP

The concept of whatever you like in a sandwich working in an omelette is interesting - peanut butter and honey omelette sounds a bit too odd but I might try veggie bacon & tomato

Smoked Haddock

Poach haddock in milk
Add a couple of tablespoons of poaching milk to eggs

Make omelette and add flaked haddock
Top with cheese sauce
