What cheese for philly cheesesteak?

Hi, not sure what cheese to use but we're thinking of giving this a whirl this evening. Recipe calls for provolone cheese which our local tesco does not have. Any alternatives?

How about mozzarella?

Not the wet kind but sliced or grated.

I think they use american cheddar ir montery jack. so a double glouster or red leicester would work.

(philly cheese steak is basically braised beef, fried onion, cheese all melted into one and stuffed jnto a hot dog bun)

If you can't get provolone then your best bet is a cheddar/mozzarella mix. You can it from Tesco. Enjoy that's one of my favourite dinners.
