Those of you who make sushi and poke, where do you buy the sashimi grade tuna , salmon?
Or can the packs in your average supermarket fridge do?

Fish markets for sashimi, but it's very exxy. Very rare treat for us.

For poke, I find fish monger salmon fine, because you are drenching it in sauce.

I don't trust supermarket fish, personally. Too many steps in the supply chain.

If I couldn’t get to a fish market, I would trust Waitrose fish counter. Sadly I live in the US, where all food is a bit dubious.

How do you make the rice? I have sushi rice but it's always wrong! I'm a good roller but I just can't get the rice right
