Pork or chicken saltimbocca - batten out the meat, secure the ham and ideally a sage leaf to it with a cocktail stick, fry in butter until cooked, then squeeze over some lemon. Serve with veg or salad and the pan juices.
Twist on your pasta idea - chop it into a pasta bake with a blue cheese sauce and some blanched broccoli
If it's thick cut, chop it into a risotto (though actually, would be fine even if it was thinner IMO)
Check whether the sandwich ban extends to wraps and toasties - I love a wrap made with ham, cream cheese and salad, and ham and cheese toasties are clearly food of the gods
Egg muffins: Use slices of ham to line an oiled muffin tin, then fill with eggs and veggies (eggs either cracked in whole on top of the cheese/veg, or all mixed together like omelette), bake until the egg is set.
Cheaty tortilla: Fry an onion in an oven-proof frying pan. Chop up the ham with with any leftover veg (bits of cooked new potato are especially good) and cheese, mix with egg, stir in the fried onion, return the lot to the pan and bake in the oven until it's all set.
