Fairy cakes to take into school on Thursday morning, is it too early to make them today, Sunday?

It's not for the PTA, it's an end of term thing, what do you think, will they still be ok by Thurs if I make them today and keep them in an airtight tin?

Too long I think. But could you freeze them un-iced?

Could you freeze them? They may go a bit dry otherwise? (Cakes don't generally last long enough around here to find out!!)

Thanks, will they freeze ok do you think? Even then it's a pita to ice them on Weds night. OK, will have to do them Weds night

freeze them then do just simple glaze icing and loads of lethal hundreds and thousands. It is more the icing appeal of cakes than the WI best in show sponge so would worry too much.

easier to ice when frozen too! infact I usually freeze any cakes I'm going to ice for that reason

Blimey, that last post makes me sound a bit earth motherish (defo not!) Should add that's only twice a year for DC's birthdays and twice a year for school fairs!
