Inspired by the Greggs AMA and my lunch at M&S cafe today (get me!)..

Hit me up with your best tomato soup recipes.

Must not be cloyingly sweet
Must have a few tomatoey lumps in
No lentils. Under any circumstances.

I like this roasted tomato soup by Bill Granger. I usually switch celery for the fennel (because I tend to have celery in the fridge).

My tomato soup isn't lumpy but absolutely delicious, (even if I do say so myself, you could just go easy on the blender or throw in a few tinned tomatoes after blending.)

Fresh tomatoes (expensive ones might be nicer but I do cheap so Salad Tomatoes, I also use about 3-4 bags)
Peppers
Mushrooms (lots of them, it gives an awesome flavour)
Onions
Fresh Garlic (slice it)

Put all of the above on a tray, spray with light oil, or cover in butter depending on fat content, sprinkle with Basil, and mixed herbs.

When these are baked, put in pot with Passatta, tinned tomaotes, worcester sauce, more herbs and basil, and I use the bottle of stock and hot water, about 1-1.5 lires depending on size of pot.

Bring to boil and let simmer
Add a few drops of tabasco for kick, and either a teaspoon of sugar or sweetener
Let simmer for another 10 minutes
Blitz with hand blender, adjust herbs for taste
strain
serve/freeze

If you want it a bit thicker you could add a potato or 2 but I don't usually, and you could add cream for taste also when serving.

God I made a Tom soup last week just like that, you'd have loved it!

2 onions
2 big carrots
a red pepper
a sweet potato
a tin of fancy chopped tomatoes
garlic
Bay leaf.
Chicken stock

Saute veg for 5 mins in butter. Add garlic and stock cubes. Add tin of chopped toms, then half a can of water, till veg is just covered. Add bay leaf. Simmer till carrots are soft. Turn heat off. Remove leaf. Blend till desired consistency.

I wish I could remember it, I was once given a lovely recipe. I'm pretty sure the key was to roast the tomatoes first :)

i just use the jamie oliver one. simple and blend till smooth with a stick blender.
