Recipe for a great beef chilli needed!

I've been making chilli for years, but I'm ashamed to say that I've always used the same pretty crap recipe - mince, tinned tomatoes, kidney beans, water and a chilli powder mix, then slow cooked. It takes minutes to make, and is edible, but I'm sure I can do better! (I had one in Wetherspoons recently that tasted far better 🙄).

Does anybody have a foolproof recipe? Should I be using a particular cut of beef rather than minced beef?

Jamie Oliver’s brisket chilli is very good.

The Hairy Bikers' beef chilli with bitter chocolate (on the BBC food site) is straightforward and really good.

Jamie's chilli from Ministry of Food book is awesome.

No onions ? Use either real chillis or easy chillis, dash of Worcester sauce, 2 cloves of garlic, a good squeeze of tomato purée as well as tinned toms, don't use a packet mix. Good minced beef, kidney beans.

Lisa Faulkner's slow cooked chilli is amazing.

BBC good food one is excellent. All chilis seem to improve after freezing. No idea why.
