Quick tea/dinner for 16 yr old girl (vegetarian) ideas?

OK I know this sounds pathetic, but I need some urgent ideas. DS is bringing his girlfriend round after school before they go out somewhere together and I said I’d leave something for them to eat. But, I have no idea what to make? He’s a 6ft carnivore and she’s a very petite, slim girl who I suspect is careful with what she eats. DS was meant to find out some of her favourite foods but of course hasn’t Angry.
When she came once before I left them pesto pasta with halloumi cheese and grilled veg (and chicken for DS) so I need something else. All our typical family meals are meat and fish based!

If you have eggs/potatoes in the house a Spanish omelette is usually a winner with teenagers and v quick to make so you could always wait until she arrives and offer it as a choice.

Serve with a big green salad and crusty bread.

Other easy, things I make when I don't know what someone likes or how much they'll eat are baked potatoes with a choice of fillings, veggie and non veggie and fajitas, again with a choice veggie and non veggie fillings.

Do quinoa with either of those not rice. The bootstrap Jack recipes come in not too bad on the calorie front. You just bump up the carb portion for bigger eaters
