Glazing a tart for tonight (with icing sugar and blow torch).. can I do it now?

I think the sugar might 'weep' if you stick it in the fridge - ie. get a bit tacky and damp...

I don't think I would do it if the tart was quite moist because the sugar would just dissolve again, but I seem to remember when I was at college they used to serve leftover creme brulee after a formal dinner which was fine.

Thanks - had a vague recollection of stg like that happening. So I could do it early and leave it out then? Not like I need to worry about it spoiling in the heat!

Cross-posted. OK Kathy - is fairly moist (lemon tart). Would be a shame to spoil it. May do it just before mains. Is only my DF coming anyway!
