Quick and healthy ideas

2 nights a week we all get in from work/nursery quite late. I would like some quick meal ideas to get on the table in under 15 minutes. No dietary issues although one of the kids isn’t too keen on fish. It’s for me, DH, DS2 and DS 10 months. I’ve used the slow cooker a couple of times but getting a bit ‘samey’.

could you prep something beforehand.
like some chicken thighs in the morning and pour over sauce.like a mustard and leek/casserole or white sauce.or a currys sauce.then leave I nthe fridge for the day.then just oven cook.
quick stiry fry.you can get those packs or just chuck things in.
cheesy carbonara.
fajitas.
fritatas
rosti
google on pot pastas.
thia curry.
jacket and beans.
tuna and may penne
10 minute boil in bag cooked in turmeric water and or stock then mix through some frozen veggies
jar of dolmio pasta frankfurter sausages.
sausage and bean takes a bit longer but is dead simple.
takes a bit longer again but only 20 if you get one of ready rolled jus roll pastry sheets.then you can put whatever ptopping you choose on acon and egg.veggies,slami and cheese.hamm and cheese.pesto and chicken

Our quick ones are:

Gnocchi - fry some pancetta and mushrooms, then stir some Philadelphia through it all

Feta pasta - finely chopped red onion, diced feta and chopped sundried tomatoes, all stirred through with some red pesto (and we make extra for lunch). Any pasta dish that doesn't require cooking a sauce would be as quick.

Fajitas

As much as possible I try to cook things in advance as well, or make extra when we do have something, so that all we have to do on the night is cook some pasta or rice to go with it.
