How to smoke almonds without a smoker

Can I do it in a regular oven somehow?
They are for a sweet potato wedges recipe; they don’t need to be perfect.

I’ve never heard of smoked almonds...you don’t mean toasted?

I think you might struggle then. I don’t know a way of smoking without using snow burning damp wood chips... that’s what makes the smoke! You can get smoked salt (Malden do some which I’ve seen in supermarket) which may replicate flavour?

Yes you can - 2 ways....

make a stove top smoker in a wok... put tea leaves (or wood chips) in a small fire proof dish in the bottom of a wok. Put a trivot over the top. Put the almonds in a single layer in a heat proof dish on the trivot. Light the tea and wrap the whole lot in a double layer of foil - make sure the smoke cannot escape. Leave to smoke for 15- 20 minutes.

Alternatively.... whisk up an egg white with a generous amount of salt and a dash of water. not frothy just to break it up. Add the almonds. leave to soak for 10 min or so. Strain the excess egg white off ( I leave them to dry to kind of tacky stage so there are no lumps of egg glaze ). Toss the whole lot in smoked parprika (you can add other spices & sugar if you want beer nuts). Spread on a single layer on a baking sheet and toast for about 15 minutes turning once or twice. Try to make sure they don't touch or they will stick together.
