Quick, filling & healthy dinner ideas?

Hit me with your recipe ideas please!

I have a very hungry 15 mo who needs a proper evening meal but I'm struggling to think of quick, filling & healthy dishes that I can whip up in 20 mins. Needs to be something that DH and I can eat too as I can't face making 2 different dinners!

Gnocchi. Quick boil, then chuck on an oven tray at 180-200 ish for 15-20 minutes with cherry/plum tomato halves and spinach. Add pesto and top with Parmesan.

Pesto, pasta, cheese and salad.

Baked potato with the filling of your choice (McCain do the microwave baked potatoes so really quick).

Get yourself an Instant Pot if you want to prepare quick dishes. Stews, chillis and curries cook in a fraction of the time a normal recipe takes. I use mine nearly every day, either for complete dishes or as a way of speeding up something else I'm cooking. Parboiling potatoes before roasting them takes one minute at pressure, plus a few minutes to get up steam. Vegetable curry, say 5 minutes pressure after frying. If you bought pre- sliced veg and onions and cooked your rice at the same time you could have a delicious meal ready in under half an hour. Something with chopped meat or chicken might take ten minutes pressure. You can fry in the Instant Pot, it does loads of things.

Fish is always speedy.
Cook fillets in foil packages in the oven with what even flavourings you fancy, sweet chilli sauce, lemon and herbs, soy and spring onion etc.
Serve with rice, noodles, veg whatever really.
Butterfly then grill chicken breasts with a spice rub or one of the flavour combos above.
Fritata, perfect if you have leftovers that need using up!

Risotto, pea & ham, chicken, chicken and mushroom, asparagus and broad bean, the list is endless.

Thick home made soups served with bread or with cheese on toast.

Paella, there are vegetable versions as well as the more traditional chicken/seafood combination.
