Kale - who knew?

I am a kale hater and have found it seems to be everywhere at the moment however i had a revelation over the weekend... ended up with some kale and googled to see what else i could do with it so it didn't end up being disgusting green slime - shredded and cooked in the oven for a few minutes with olive oil,. sugar and salt turns out just like Chinese seaweed....

It’s my Guinea Pigs favourite but the family do eat it too, we like it stir fried with lots of garlic and spices

Made a kale pesto the other day, that was lovely. I quite like kale anyway, to be fair!

Best way to cook kale is fry in a wok with enough oil to make it slide easily into the bin.

I like to take the skins off pork sausages and make them into little meatballs and fry them with peppers, onions, garlic, fennel seeds and chilli flakes. Then add a whole bag of kale and fry all together until the kale wilts down. Eat with garlic bread and a glass of red.
