Vegan family meals

DH is planning to try out being vegan for a month at least. He has been vegetarian since he was a teenager, DC and I aren't vegetarian but cook mostly vegetarian meals because I don't like cooking meat and like us to eat together.
DC are 4 and 7, and not very fussy, but don't eat spinach, courgette, aubergine, okra or kale. What can we all eat that's reasonably quick and easy? We have a couple of chilli recipes, a curry recipe (most contain paneer or something DC don't eat), maybe some veg and bean stews from our current selection of recipes.

Tomato based pasta sauces are good - a spoonful of tahini stirred in gives a really nice creamy effect & makes it more filling if you have bottomless pit dc.

Also squash stew with garlic/ginger & coconut milk served with rice is very tasty.
Mixed vegetable & lentil soup with (vegetarian suet) dumplings
(should say I'm not vegan, we just like vegetables!)

Chickpea curries are a winner here. Vegan sausage and bean casserole and tofu stir fry's.
Hummus and avocado wraps for lunches.
I'm vegetarian but cook a lot of vegan friendly dinners.
