I just use loads of chunky veggies and fresh tomatoes under mashed potatoes. Mmmmm

It can be very heavy if you use soya or quorn.

I do chopped onion, carrot, celery and a clove of garlic plus bay leaf, half a pack of brown/ green/ puy lentils soaked for fifteen mins then rinsed, add a bit of vegetable gravy powder once the lentils are tender.

Hate quorn, Use loads of veg in the base and puy or green lentils, some passata and loads of spices (Ras el hanout is good, ) make the mash with a mixture of potato sweet potato. celeriac and swede. Just think about your balance of texture, taste, colour and nutrition . Nice big green salad on the side

I second using brown/green/puy lentils alongside veg. I think it gives it the right heartiness and, indeed, look.

I would use lentils as the substitute for mince. Is Worcester sauce veggie? I put it in mince for extra flavour. Or maybe a dash of soy sauce? Plus garlic, onion, carrots, peas, gravy or stock.

Red Dragon Pie
ThI is the best vegetarian/vegan cottage pie I have ever had. I’ve been making it for nearly 40 years! I use lotss more herbs and seasoning and sometimes some green chillis. it’s a recipe from the 1970s and food was blander then!

No, it needs to be aduki beans- but they’re easy to buy. I get them in Morrisons.

Quorn is hanging.
I use a mix of red and green lentils and finely chopped carrots and mushrooms. Rosemary mash on top

I came on to third red dragon pie!

Otherwise just veg - aubergine chopped small has a good texture - add all the brown things in your kitchen (balsamic, mustard, soy sauce, etc) and a spoon of flour before you add the liquid for super tastiness. Not much protein though

Rose Elliott has a recipe that uses tinned green lentils, sun blush tomatoes and smoked cheese in the mash. It's lovely.

I make this BBC Good Food one but put normal mash on top. The recipe is quite big so i normally put it in 2 dishes and freeze one for later.

I usually use a mixture of sweet and normal potatoes on top though, as I prefer the texture.

Described as shepherdess pie in the magazine, which helped me sneak is past DD and DH - no parsnips in ours as none of us like them, cheese in the mash as we’re not even vegetarian let alone vegan. I subbed the tamari with something - either soy or Worcester sauce, can’t remember.
