Anyone have a fab recipe for blueberry muffins?

I have tried a few lately but they seem to turn out a bit dry and bland. Any ideas?

Yes!

14oz plain flour
6oz caster sugar
1tbsp baking powder
rind of one lemon
half tsp salt
284mlcarton of buttermilk
2 eggs beaten
3oz butter melted
9oz blueberries

preheat oven to gas 6/200

Combine flour, sugar, baking powder, lemon rind, salt.

In separate bowl mix buttermilk, eggs and butter

Make a well in centre of dry ingredients and pour in buttermilk mixture. Stir until ingredients combined (don't over mix). Fold in blueberries and spoon mixture into tins/cases.

Bake for 25 mins
