Tried this recipe out tonight as am trying to decide what to make for the school summer fayre next week. Really good and no baking involved!

No Bake Cookies

24 servings 2 cookies 10 min prep
2 cups sugar (I actually used just under one cup of Silver Spoon light and it's plenty sweet enough)
3 tablespoons cocoa (I used hot chocolate powder)
1/2 cup butter (I used stork)
1/2 cup milk
1 pinch salt
3 cups oatmeal
1/2 cup peanut butter (I used crunchy wholenut)
1 cup Rice Krispies
1 teaspoon vanilla

1.Line a square tin with baking parchment.
2.Mix sugar, coco, butter, milk, and salt together.
3.Boil on the stove for 1 minute.
4.Take off immediatly.
5.Mix in rest of idgredients.
6.Put mixture in tin and chill in fridge.
7.Cut into squares and store in fridge.
8.Try and stay away from the tin and fridge.

Will be testing them out on the boys in the morning.

Sounds yum.

One question - would the peanut butter be OK? DD's school is strictly no nuts for cake days, packed lunches, etc. Their policy is nothing with nuts allowed on the premises.

Would be a shame to make/bring them, and not be able to use them.

Eek! Good point - I did think about putting a big note on to say "Contains peanut butter" but hadn't considered that they might not be allowed. Does that mean we'll have to eat them at home?
