very easy vegan dishes?

DS has said he'd like to become vegan when he goes off to uni, so I want to teach him some easy recipes. I'm not that familar with vegan food. So far I've come up with:

Pasta with a ratatouille sauce
Falafel and salad wraps
dahl and rice
Roasted veg tray bake with sweet potatoes

Does anyone have a really quick, easy vegan recipe I could add to the list?

Baked bean stew - fry onion, add green pepper then throw in a tin of baked beans with a chopped tomato and simmer for a few mins. Very yummy on its own or as a side.
Vegan chilli - usual veggies plus bulgar wheat as the ‘bulk’

Have a look at Jack Monroe's cooking on a bootstrap site. Her vegan recipes are apparently great and student budget friendly. X

In Cyprus we have several beautiful dishes which happen to be vegan ..made when meat was scarce

Its important he doesn't just end up eating healthy chips all day. Above recipes are really easy and don't contain meat substitute nonsense such as soya or seitan.

Potaje de lentejas is a Spanish dish. I love it and am nowhere near vegan. I can't remember if its made with stock but if it is just use a vege one.

I mean unhealthy chips lol. Homemade is ok now and again. Fried then salted sprinkled with cracked coriander seeds salt and fresh lemon juice or salted and sprinkled with dried rosemary
Tom yum/ thsi red or green curry soup with cherry tomatoes mushroom lemongrass and beansprouts is tasty..you just need to add water and tinned coconut milk to shop bought paste . I also add a dash of lemon juice and a pinch of sugar. Just make sure the paste does not contain fish sauce

A book like 15 minute Vegan by Katie Beskow could be useful. The recipes are all easy and v quick.

Moroccan Spices Chick Pea casserole

Just cop some vegetables aubergine, courgette & large tomatoes in equal parts. Fry with a chopped onion with Moroccan spice mix & some chilli paste. A As some veg stock.
Place in slow cooker or casserole dish with chick peas and a hand full of lentils. Cool till tender - no worries it it takes a but longer! Serve with couscous. Leftover can be frozen.

I have recently become vegan and all for quick easy recipes, I bought a cookbook called ‘the hungry student vegan cookbook’ which has cheap easy meals.

I also have a Pinterest board which I get most of my inspo from. It’s actually really easy when you get into it! Grin

Veggie chilli with lots of beans etc is great for students as can be frozen and dished up with different sides to give lots of variation. Eg on a jacket, with rice, tacos, wedges

I'd forgotten vegan chilli. He used to love quorn chilli when he was a baby. I'm guessing that's OK for vegans?

My DS is a student and has to really watch his food budget. He isn't a vegan but the cheap 'on toast' meals he sometimes does are vegan.

Tinned spaghetti, beans, tomatoes etc ... on toast. Tomato soup. Mushrooms.

Quorn isn't vegan (they may have some vegan products by now, but it usually has egg in the mince).

Beans on toast (good source of protein!)
Have peas with everything
Mushrooms and spinach with rice

Peta's vegan college cook book - its brilliant for students - I got it for uni even though I wasn't a vegan then.
All done in a microwave - cheap, easy and tasty.

Green lentils are far tastier than quorn mince (which I don't think is vegan anyway) for bolognese. Much nicer than red lentils in place of mince in dishes. Cook quickly, all my meat eating family love it. I make and freeze lots of it and use it in lasagne too.

Most pitta breads are vegan. He could make pitta pizzas with passata and vegan cheese.

Thank you MrsSouthgate and Slapping. I didn't realise. I know lots of people think Quorn is not a healthy product but didn't know much about it.
I'll look at Bosh.
MiniMum why B12? Is that hard to get in a vegan diet?

The vast majority of vegans eat yeast.
B12 is available in fortified non-dairy milks - see the Vegan Society info on this.
