Winter salad recipes

I'm looking for ideas for winter salads, particularly ones which are a complete meal, so could be taken to work or school for lunch.

I do one with cold roast chicken and or haloumi (grilled with sweet chilli). Mix in any leaves , cucumber, onion, tomatoes etc and those cold precooked lentils or left over roast vegetables. Bit of lime juice, sesame and olive oil and done. Pita bread if you like. Ps its worth keeping your dressing in a separate pot if you are taking it to work/school.

I’ve just got into broccoli stalks! I use them to make a kind of coleslaw by feeding through the grater bit of the food processor with carrot beetroot, gherkins and apple then combining with fat free yoghurt. I tend to have it with tuna.
Also love curried cauliflower on salads but that’s better warm with baked chickpeas.
I’m not really into carbs but my sister does a really good sweet potato salad with a sweet chilli dressing, spring onions and peppers.
Tuna pasta works well in lunch boxes
Baked butternut squash falafel on a bed of leaves and grated carrot are also good.
