I want it medium. 2hours?!

If that's brisket, you don't really want it medium - it'll be chewy as anything. Brisket is a cut that is best slow braised/roasted, not really as sliced roast beef.

OMG how did I not notice??? Thank god for Tesco local - just picked up three small roasting joints. God I'm so embarrassed 😳

Ohhhh but that brisket will be amazing when it gets a little colder. Stick it in the freezer for now and then turn it into this when the temperature drops
