Now Christmas is out of the way!

Back planning some healthier food for the week!

Tomorrow I’m at a house party so that could be a disaster

Tuesday: veggie sausage and bean casserole with mash and green veg.

Wednesday: black bean and veg fajitas

Thursday: lentil and kale dhal and rice

Friday: probably leftover Dahl In jacket potato with salad

I was sad a planned nearly the whole of February (budgeting as baby due in May so need spare money)

Today (Sunday) - Lazy tea due to decorating so.. Chicken Kievs, potatoe waffles and spaghoops.
Monday - Roast chicken and Chips
Tuesday - Leftover chicken fajitas
Wednesday - Spag bol and garlic bread
Thursday - Pork chops, stuffing, mash, Yorkshire puddings, veg (parsnip, peas, carrots) and Gravy
Friday - Sweet chilli chicken stir-fry noodles
Saturday - Omelettes, chips and baked beans
Sunday - Roast chicken dinner
Monday - Leftover chicken pasta bake
Tuesday - sausage casserole and mash
Wednesday - shepherds pie
Thursday - fish fingers or chicken dippers, chips, peas
Friday - beef stew and dumplings
Saturday - jacket potatoes, tuna mayo, cheese
Sunday - Roast pork dinner
Monday - leftover pork sweet chilli noodles
Tuesday - Chilli con carni in wraps
Wednesday - Mac and cheese
Thursday's - Gammon, egg, beans, wedgies
Friday - chicken casserole

I love meal planning. My husband used to do the cooking before I was on mat leave and we seemed to waste so much food. Now I do the cooking and meal prep/online shopping so there is no food waste. I love to see an empty fridge at the end of the week.

I just plan in a notepad. I like to plan one meal a week which I can double up on and put the left overs in the freezer, one meal from the freezer (usually the oldest thing in there to keep it rotated), 2 new recipes to keep things fresh and avoid eating the same meals week in week out, 2 favourites and then we are usually at my parents or in laws one day a week.

I have a scrap book where I have put all our favourite meals so I look in there for inspiration if needed. I also try and cook 2 veggie meals a week as we are trying to cut down our meat consumption and 1 fish dish (I find this the hardest so any inspiration would be great!).

This week we are having:
Fajitas
Steak, sweet potato wedges and broccoli
Leeks and cheese sauce
Salt and szechuan pepper tofu
Parmesan chicken
Spicy meatballs

Peanut91 my fridge is also bare by Monday morning when I go to Aldi.
I love your idea of making 2 new recipes a week, I tend to fall into a rut!!

Tonight - Chicken breast with new potatoes and a sort of warm vegetable salsa thing. Maybe peas or some other veg too.

Friday - Chinese style sweet and sour (crispy) tofu dish with egg fried rice and pac choi.

Saturday - Canilini bean and coriander fritters with new potatoes, broccoli & carrot salad

Sunday -- not sure yet. Thinking either pasta or maybe a prawn curry. Depends on exercise plans for the day and hoe much time I have in the evening.

Ijumped I went full time vegan in August. All the above is vegan so pizza is from the deli counter as Asda ego have vegan cheese, creamy pasta with plant milk
It’s really fixed my relationship with food 🤷🏻‍♀️

My friend lent me her Cranks fast food cookbook (from 2003! Clearly well loved!) so I think we will have a veggie week!

Mon: veggie burgers
Tues: Moroccan potato pastelles with roasted red pepper strips and chopped salad
Weds: roasted field mushrooms with pesto and fried polenta triangles
Thurs: avo toast with a fried egg and kimchi
Fri: out, kids will have pizza
Sat: out, kids will have baked fish with tomatoes and sweet potato wedges
Sun: corn chowder

I started meal planning again in January and have been doing quite well. I find it helps prevent overspending and stops to many frozen to oven dinners. We also found some new recipes we liked as a family which is always a plus. This week isn't one of our best and runs from a Thursday
Thursday - Chinese style rice and chicken
Friday - dairy and gluten free macaroni cheese
Saturday - McDonald's
Sunday - cottage pie and veg
Monday - egg, chips and beans
Tuesday - green Thai curry
Wednesday - soup probably lentil and ham

I used to hate meal planning. Well I still do. I forget ingredients, or change my mind due to time constraints or kids needing to be picked up and dropped off and no time.
