Best lamb gravy recipe?

I’ve made a chicken gravy with a roux before but was wondering what to add to a lamb gravy to make it extra special? Have fresh herbs like thyme/sage/mint that I could chuck in too

I always add red wine (or mulled wine) and a spoon of cherry jam to the gravy, as well as rosemary, pepper, garlic.

Presuming you’ll be cooking a lamb roast to go with your gravy, while the meat is resting, remove excess fat from the roasting tin, leaving the juices, whisk in a little bistro powder (not granules) and a couple of Knorr lamb stock cubes dissolved in boiling water, stir and simmer until the right consistency.

I would flavour the meat while cooking with rosemary and save the mint for the mint sauce.
