Substitute for mushrooms in a veggie wellington?

I'm making mini camembert and mushroom wellingtons for starter Xmas day. Just remembered one in party doesn't like mushrooms! So looking to substitute.. It'll have spinach and camembert in..what should I add in? Another cheese...another veg? Wanting them to be vegetarian though. Thanks!

Also I don't think Camembert is actually vegetarian, so if you're making it for a strict vegetarian then you might need to use a different cheese... (sorry!)

Some Camemberts are vegetarian (use veggie rennet) but do check carefully! Smile

You will need something quite dry to stop the pastry going soggy. I would suggest aubergine that you have precooked or maybe spinach pinenuts and cheese? If you want life to be really easy what about doing a square of puff pastry dotted with veg and cheese? You could even personalise them to likes / dislikes. Triple check cheese though as a lot aren't vegetarian- how ever I don't eat meat but will scoff any cheese going!

Ooh some lovely ideas here! No not strict veggies at all so any cheese is fine. Might be case of what I see first in the shops through the crowds tomorrow!
