Pork loin recipes please

Hi

Can anybody recommend a pork loin recipe please, as I'm cooking the pork for Xmas dinner

DM has mentioned that loin can go dry so I'm trying to avoid that ( as my entire family seem to think I'm incapable of anything since having a baby!)

How big is it? Do you want to stuff it? And has the rind been left on?

It's 2.3kg it does have a rind and would prefer not to stuff. Thanks @Ricekrispie22

I know some people don't like fennel but it isn't overpowering in that recipe and it goes so well with the pork.
