Defrosting lamb joint

I’ve got a 2kg leg half leg of lamb in the freezer for Christmas Day. I cook my meat on Christmas Eve so when do I need to start defrosting it?

We’re in Australia and it’s bloody hot outside so I can’t defrost it in the garage or on the kitchen counter, which means it has to be done in the fridge.

Cooking the lamb isn’t an issue, but I’ve never had lamb in the freezer.

I’m cooking one for Christmas Eve dinner and I’m taking mine out tomorrow (Thursday) night and defrosting it in My stupidly cold fridge. I’m hoping that’s enough!

Start defrosting it in the fridge on Saturday morning, or even Friday evening. That'll give it ample time to defrost. It'll be fine in the fridge for a day before cooking if it defrosts before Xmas eve.

I'd take it out of the freezer tomorrow - better it's defrosted and sits in the fridge than it isn't ready to cook in time.
