Marmalade

Does anyone have a good marmalade recipe please? I just have normal oranges.

I tried making some with a Seville orange recipe but it didn't set. I reboiled and added pectin but it just went to a thick syrup. The recipe tasted good though and was one where you boil the whole fruit. Does anyone know how much pectin I should add or have a full recipe using normal sweeter oranges?

I think that normal oranges will be too sweet and probably have too little pectin. You shouldn't need to add any pectin at all, if using Seville oranges (but most recipes will also call for a lemon or two as well). I use a recipe where you boil up the oranges whole, then cut them open, scrape out the innards, cut up the peel then boil the whole lot up with the innards in a muslin bag to give off the pectin. Does your recipe ask you to do the last bit?

Yes that sounds like my recipe. I'm not sure where I can get Seville oranges here and imagine they'll be expensive. I did wonder about adding lemon juice but didn't know if it'd be enough and don't want to keep wasting too much time trying different ones. I'll try and hunt out Seville oranges. Thank you for your reply.

You can use pink grapefruit. They make a good marmalade.

Also Seville oranges aren't really in season (or available) until mid January.

Where are you for them to not be available?

Thank you, I might try a batch of grapefruit. Could I use the same recipe i used for the Seville orange marmalade or best to look up a specific recipe?

I am in the US, I have tried all supermarkets and markets in the area and can't find any.

I use 1kg Seville oranges, 1 kg jam sugar, juice of one lemon.

We used to live in the states. You can buy them online from Florida. Should be available about now. We bought a quarter of a bushel. An eighth would have been plenty!
